Protecting a Traditional Cheese Through Science

Serra da Estrela PDO cheese depends on enzymes naturally found in the flowers of Cynara cardunculus. These enzymes are responsible for coagulating sheep's milk and play a fundamental role in defining the texture, flavour and quality of the final cheese.

As climate change intensifies, increasing temperatures and prolonged water scarcity may alter the production and activity of these enzymes. ProCardo seeks to understand these changes and provide scientific knowledge that supports producers in maintaining the quality, consistency and sustainability of this unique Portuguese product.
