This article introduces the objectives of the ProCardo project and highlights the importance of understanding how climate change may influence Cynara cardunculus, vegetable coagulants and the production of Serra da Estrela PDO cheese. It also presents the collaborative approach adopted by the consortium to support the long-term sustainability of traditional cheesemaking.
ProCardo at Ovibeja 2026
The ProCardo project participated in the 42nd edition of Ovibeja, Portugal's largest agricultural fair, sharing its research with professionals from the agricultural, food and scientific sectors.
Invited Scientific Presentation
During the 42nd edition of Ovibeja, held from 29 April to 3 May 2026, members of the ProCardo consortium delivered an invited presentation introducing the project's scientific objectives and first and second year results. The presentation highlighted the importance of preserving the quality and sustainability of Serra da Estrela PDO cheese through a better understanding of the effects of climate change on Cynara cardunculus and its milk-clotting enzymes. Participation in Ovibeja provided an important platform for knowledge transfer between researchers, agricultural professionals, policymakers and the wider agri-food community.
ProCardo at Mercado do Queijo de Gouveia 2025
The ProCardo project participated in the 2025 Mercado do Queijo de Gouveia, an event dedicated to promoting Serra da Estrela PDO cheese and strengthening the connection between research, producers and the local community.
Promoting Science and Traditional Cheesemaking
Held on 29–30 March 2025, the Mercado do Queijo de Gouveia brought together producers, researchers and visitors to celebrate one of Portugal's most iconic traditional products. The ProCardo team presented the project's objectives, first year results and ongoing research, highlighting how climate change may influence Cynara cardunculus, vegetable coagulants and the long-term sustainability of Serra da Estrela PDO cheese production. The event provided an excellent opportunity to engage directly with producers, consumers and stakeholders while promoting scientific knowledge and dialogue around sustainable cheesemaking.
ProCardo at Serpa Cheese Fair 2024
The ProCardo consortium participated in the 2024 Serpa Cheese Fair, one of Portugal's most important events dedicated to traditional cheesemaking. The project promoted dialogue with producers, stakeholders and the general public through scientific presentations and an interactive exhibition stand.
Presentation to the Dairy Sector
Project members delivered an invited presentation introducing the objectives of ProCardo, highlighting how climate change may affect Cynara cardunculus, vegetable coagulants and the future sustainability of Serra da Estrela PDO cheese production. The session brought together representatives from the dairy industry, research institutions, producers and other stakeholders, fostering discussion around the challenges and opportunities facing the sector.
Public Engagement
Throughout the event, the ProCardo team was present at CEBAL's outreach booth where visitors could learn about the project's research, the importance of vegetable coagulants in traditional cheesemaking and the potential impacts of climate change on this unique agri-food heritage. The activity encouraged direct interaction between researchers, farmers, producers and the wider public, reinforcing ProCardo's commitment to knowledge transfer and science communication.
